4 ingredient Caramel Kettle Corn

The great debate has been going on for decades….are you team kettle corn or team butter corn?

To be honest, I love both! Anytime we had friends over or had a movie night growing up, my dad was the popcorn king and would make the best batches ever. Within 10 minutes all the popcorn would be gone and we would all we looking at him for more (and the dogs couldn’t get enough)! It’s such a simple treat and if you never have made stove top popcorn, it’s a lot easier than you think. Follow these steps below for the best caramel kettle corn ever! Trust me, you’ll be so happy you did. It’s such a great recipe because it’s a little bit salty, with a little bit of sweet, and a whole lot of flavor.

One of the down sides to snacking on popcorn is unfortunately a lot of brands and products aren’t organic, which is a big no-no when it comes to eating corn. Organically grown corn is grown without the use of synthetic fertilizers, pesticides, or genetically modified organisms (GMOs). In contrast, conventional corn often relies on a plethora of more chemicals (especially the worst one: glyphosate) and processes to enhance crop yield and pest resistance. That said, when you are looking to purchase anything with corn, it’s always in your best health to buy organic when possible. Better for you and better for the planet.

Makes about 4 cups kettle corn

The Goods:

  • 3 tbsp refined coconut oil

  • 1/2 cup organic corn kernels

  • 1/4 cup coconut sugar

  • 1/2 - 1 tsp salt, depending on how much you

The Method:

  1. First, melt coconut oil in a large sauce pan on medium high heat. Once the oil is hot, add the corn kernels and coconut sugar and cook for 7-8 minutes covered with a lid. Carefully shake the pot with the lid on every 15-20 seconds to make sure everything is popping correctly. This is a labor of love so make sure to put some elbow grease into it.

  2. When the popping slows down after about 8 minutes, remove from heat.

  3. Grab a large baking sheet pan and line it with parchment paper. Pour out your cooked kettle corn over the parchment paper. Sprinkle with salt and remove any unpopped kernels.

  4. Enjoy immediately while the corn is warm!
