Makes one 2-3 wraps:

The Goods:

For the roasted veggies:

  • 4-6 mini peppers, sliced

  • 1/2 medium cauliflower, cut into bite size florets

  • 1 tbsp olive oil

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp granulated garlic

  • 1 package Lightlife Smart Bacon

For the cashew cream: (optional)

  • 1 cup cashews, presoaked and drained

  • 1/2 cup water + extra if needed

  • 1 tbsp white wine vinegar

  • 1/2 tsp salt

  • 2 tsp lemon

For the honey mustard:

  • 1 1/2 cups cashew cream or vegan sour cream

  • 1/3 cup dijon mustard + extra if needed

  • 1/2 tsp turmeric

  • 1 tsp salt

  • 3 tbsp agave + extra if needed

Fixings for bacon wraps:

  • 2-3 warmed large flour tortillas

  • 1-2 avocados, sliced

  • lemon wedges

  • microgreens (optional)

The Method:

  1. Preheat oven to 400.

  2. If making cashew cream** Presoak the cashews in boiling water for 15 minutes.

  3. Grab a large sheet pan and line it with a silicone mat or parchment paper. Add your sliced mini peppers and cauliflower florets into a mixing bowl and season with olive oil, salt, pepper, and granulated garlic.

  4. Pour your seasoned veggies onto the lined sheet pan and bake at 400 for 30-40 minutes while rotating half way though. When the veggies are just starting to become golden brown and fork tender, remove them from the oven. The roasted veggies should be almost done by now, but not quite there.

  5. This is the time to raise the temperature of oven to 450. Add your LightLife bacon to the tray of veggies however easiest. I simply just placed the slices of bacon on top of the veggies.

  6. Bake the bacon and the veggies for 7-10 minutes once the oven has reached 450. When the bacon is crispy and the veggies are golden brown, it’s time to remove them from the oven. Set aside.

  7. If making cashew cream** Make the cashew cream by adding the soaked & drained cashews, water, white wine vinegar, salt, and lemon into a high powered blender and blending on high for 1-2 minutes until fully smooth and pourable.

  8. As the veggies are roasting, time to make the honey mustard. Grab a mixing bowl and add all the cashew cream or vegan sour cream, dijon mustard, turmeric, salt, agave, and whisk for 30 seconds until fully mixed. Taste for sweetness, saltiness, and tanginess. Set aside.

  9. Grab your tortillas and warm them up on a cast iron flat top or microwave. Set aside into a steamer basket to keep warm.

  10. When everything is ready, it’s time to build the wraps. Place a warm tortilla onto a large plate, and smear a dollop or two of honey mustard onto the entire center. Place a spoonful or two of roasted veggies into the center, and then avocado slices next, then LifeLife bacon, and finish with micro greens. Roll up tightly and serve immediately!
