Happy Hormone Kale Salad

It’s spring time and I’m already feeling the summer vibes. When the days get longer, I like to eat in a way that feels aligned with my body, and lately eating raw till four has been my jam. Eating raw til’ 4 is exactly how it sounds…eating only raw whole plant based foods all morning and afternoon, and then eating cooked food after 4PM. For the past two months I”ll eat raw till four 5-6 days out of the week, and it’s been an absolute game changer for my health.

I found it helped give me more energy continuously throughout the day, made my gut microbiome super happy, and overall made me feel really good. I’m eating lots of raw wraps, snacks, dips, fruit bowls, nut butters, and huge green salads, all which contains lots of essential nutrients that my body is craving. It took a few days to really lean into this way of eating, but now I live for it!

Which brings me to this AMAZING KALE salad that I’ve had on the rotation these past few months. It’s packed with so much flavor that you won’t even realize you are eating a whole raw dish. From the walnuts to the spirulina to the kelp, it’s all packed with the good stuff to keep your hormones regulated, healthy, and happy. I teamed up with my friends at Elix Healing to bring an extra boost for your hormones in this raw kale salad and trust me, it will become your new favorite go-to meal. This whole dish can be made under 15 minutes, and you’ll be feeling all the benefits for hours.

Here’s a little breakdown of how this salad is making your hormones smile.

Walnut:

Nuts are rich in poly and monounsaturated fats, which are responsible for aiding in blood vessel health and hormone production. They positively impact your endocrine system, help lower cholesterol and insulin levels while maintaining blood sugar.

Mango:

Vitamin E, which is abundantly present in mangoes, helps to regulate sex hormones and boosts sex drive. Thanks to high levels of vitamin C, mangoes make for an easy way to boost the immune system.

Kale:

Dark, leafy greens such as kale are rich in magnesium, which supports healthy levels of estrogen and testosterone. The calcium from kale can help maintain hormone balance and alleviate PMS symptoms.

Kelp:

Seaweed helps in better hormonal management and improves thyroid functioning while being a great source of iodine, an essential nutrient.

Tahini (Sesame Seeds):

Sesame seeds contain phytoestrogens and contain high amounts of compounds called lignans, which modulate your body’s natural hormone levels. When estrogen levels are too high, these lignans attach to your estrogen receptors, reducing the activity of your body’s natural estrogen hormones.

Spirulina Powder:

Serves 2-3 people:

The Goods:

  • 2 avocados, sliced

  • 1 mango, peeled and cubed

  • 1 bell pepper, seeded and sliced on a mandolin 

  • 1 carrot, grated

  • 1/2 package alfalfa sprouts

  • 1 bunch kale, stemmed and washed thinly sliced pinch of salt and lemon juice and massaged

For the walnut meat:

  • 1 1/2 cups raw walnuts

  • 1 tsp granulated garlic

  • 1 tsp thyme

  • 1 tsp paprika

  • 1 tsp kelp flakes

  • 3/4 tsp salt

  • 1/2 tsp black pepper

For the dressing:

  • 1 avocado

  • 1/2 cup hemp seeds

  • 1/4 cup tahini

  • 1/2 tsp spirulina powder

  • 2 tbsp maple syrup

  • 2 large lemons, squeezed

  • 1 serving of Elix Cycle Balance

  • 1 tsp salt

  • 1/2 cup water

The Method:

  1. First, pulse the walnuts and all the ingredients for the walnut meat in a DRY high powered blender for 10-20 seconds until you have a crumble. Pour it into a small bowl and set aside.

  2. Next up is the dressing! Add all the ingredients for the dressing and your Elix Cycle Balance into a high powered blender and blend on high for 30-45 seconds until you have a smooth consistency. Taste for salt. Set aside in a small mason jar in the fridge.

  3. If you haven’t already, now is a good time to massage your kale for 2-3 minutes with a pinch of salt and lemon juice. When you kale is softer, time to build the salads.

  4. Grab the serving dishes, and divide the kale up evenly amongst the bowls. Now build your salad, I like to start with the walnut meat crumble, then carrot shreds, bell pepper slices, mango cubes, and top with avocado slices and alfalfa sprouts. Drizzle everything with your dressing and you got yourself one big happy hormone salad!
