Grilled Honeydew Salsa Verde
Wowza. This is the salsa I never knew I needed until I made it. I’ll admit, I haven’t been the biggest fan of honeydew - and admittedly, I’m the first one to pick it out of a pre-made fruit salad - it always felt like a sad filler fruit. Lately however, the honeydew at our grocery store has been SWEET and JUICY. The two things I love most about melons. Because they’ve been so against-the-norm of their undesired stereotype, I decided that it was time to give this sad melon the makeover it deserves. And obviously since I’m a San Diego girlie, we had to start with salsa.
This salsa is surprisingly complex with so many different flavors ranging from sweet, spicy, charred and herbaceous. I skipped the garlic in this one and I’m glad I did because it really brought out the flavors of everything else!
Another reason why I love this rendition of salsa verde is because honeydew is because it’s so rich in nutrients that it will help reduce blood pressure, can help with blood sugar cravings, and can help your skin glow from the inside out. It’s a win-win-win y’all!

Makes 6 servings:
The Goods:
1/2 honeydew melon, seeded, peeled and thick sliced
1/2 red onion, peeled and thick sliced
5 tomatillos, peeled, washed and cut in half
1 jalapeño, seeded and cut in half
1 tbsp avocado oil
1/4 cup cilantro minced
1 tsp flakey sea salt
2 limes, zested and juiced
The Method:
Preheat your grill or a grill pan and prepare it with avocado oil.
Once hot, add the honeydew, onion, tomatillo and jalapeño facedown. Cook for 2-3 minutes on each side until you get beautiful grill marks. Once you get the grill marks, remove from heat and set aside to cool.
Chop the grilled veggies to a medium dice - pico de Gallo style. Add the veggies to the rest of the bowl along with the rest of the ingredients. Mix well and serve warm or chill before serving - your preference!
