Apricot Pecan Stove-Top Granola

I love making granola on the stove-top because its soo damn fast! A lot of times i’ll be majorly craving granola but don’t have the hour it takes to make it between the baking time and resting time. This granola only requires a sauté pan and parchment paper. The sugar content is completely up to you, which also makes this a healthy alternative to buying it at the grocery store. You are in full control!

This is one of many delicious versions you could create. The base to any good granola in my opinion is coconut oil, maple syrup, cinnamon and oats. After that, its up to you to work your magic or you could follow this recipe! If you’re grain free, just sub out the oats for seeds or more nuts. If you’re nut free, just leave them out!

Makes 1 quart:

The Goods:

  • 2 tsp coconut oil

  • 2 cups rolled oats

  • 1 cup dried apricots, chopped

  • 1 cup pecans, chopped

  • 1/2 cup sunflower seeds

  • 2 tsp cinnamon

  • 1 pinch salt

  • 1/4 cup maple syrup, add more or less if desired

The Method:

  1. In a medium sauce pan over medium heat, melt coconut oil. 

  2. Add oats and stir and cook for 2-3 minutes. 

  3. Toss in the apricots, pecans, sunflower seeds, cinnamon, maple syrup, salt and stir everything until it’s all mixed. Cook down while stirring for 3-5 minutes until you can smell the cinnamon and the oats are slightly toasted.

  4. Remove from heat and immediately transfer the granola to a large piece of parchment to cool for about 30 minutes. 

  5. Once cooled, store in an airtight container in the fridge for about a week!
