Vegan Egg Nog

The infamous egg nog.. I have always had a super weird relationship with this classically rich drink. I never really understood why everyone loved it so much. It was super thick, sweet milk that had… eggs in it?!? Every holiday season it always left me scratching my head until this year.

I needed to make this loved holiday drink make some sense to me, so I got rid of the dairy and the eggs, and made this completely ridiculous, delicious vegan version of the real thing. Its somewhat thick, has all the spices, and to be real, goes really great with brandy. You’ll avoid the stomach ache too since this is made 100% out of plants and way lower in fat and calories. Thats what’s up!

Drink this with some Matcha in it, with some cookies, or even with your cereal, its a one size fits all kinda thing…. and who knows I might have to extend the life of this to be all year long!

The Goods:

  • 2 cups hazelnuts, soaked overnight or in hot water for 15 minutes

  • 8 cups filtered water

  • 12 pitted dates

  • 2 tsp cinnamon

  • 1 tsp ground ginger

  • 1/2 tsp ground cloves

  • 1/2 tsp cardamom

  • 1/4 tsp nutmeg

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup

The Method:

  1. In a blender, add hazelnuts and water. Blend for 2 minutes on high. Using a nut milk straining mesh bag, pour the mixture through and squeeze out the liquid over a big bowl. Pour the strained liquid from the bowl back into the blender.

  2. Then add the rest of the ingredients and blend on high for two more minutes. Check your nog to see if you want to add more spice or sweet. Remember it’s your nog, so make sure it’s to your liking!

  3. Pour into your favorite glass jar and store in the fridge. Best served chilled.
