Dragonfruit Pineapple Gimlet
This gimlet recipe is a take on a classic cocktail that was shipped off to a warmer climate and came back from a tropical paradise. Just in time for spring and summer, this cocktail will soon become one of your favorite weekend libations. Made with unrefined coconut sugar for the simple syrup, instead of white sugar, this swap gives this cocktail a more rounded out sweetness and it’s healthier too. Paired with some colorful tropical fruit, it’s as delicious as much as it is pretty. Don’t take my word for it. The Goods:
Equipment:
Cocktail shaker with lid strainer
2 rocks glasses
For the coconut simple syrup:
1/2 cup water boiling filtered water
For the Gimlets:
3 oz gin or mezcal
3 oz lime juice
1 oz coconut simple syrup
1/4 cup pineapple
1/2 cup cubed frozen dragonfruit, divided
soda water
Ice
The Method:
First step is to create the simple syrup. Boil water and add into a mason jar with coconut sugar. Stir until sugar is fully dissolved. Set aside. Syrup can store in sanitized glass jar for 1-2 weeks.
Prep your glasses, add 1/4 cup of frozen dragonfruit into the bottom of each glass, and fill the rest with ice.
Into the shaker, add spirit of choice, lime juice, simple syrup, and pineapple. Muddle for 5-10 seconds.
Add 2 cups/handfuls of ice into the shaker and shake vigorously for 10-15 seconds. With the metal strainer on the lid, (most cocktail shakers have one), evenly distribute mixture into prepped glasses.
Top with soda water and garnish with lime slice and leaf of cilantro. Enjoy immediately.
