Baja Hotdog Platter

It’s officially summer! That means more time with friends and family, more time outdoors, and more festivities. Makes one summer Baja platter:

The Goods:

For the hot dogs:

For the cheese sauce:

  • 2 cups soaked cashews OR sunflower seeds

  • 1 1/2 cups unsweetened plant milk of choice

  • 1/2 jalapeño, sliced

  • 2 tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp coriander

  • 1 tsp cumin

  • 1/2 tsp turmeric

  • 1 tsp salt + extra if needed

  • 1/2 tsp pepper

For the fixings:

  • sliced jalapeños

  • cilantro leaves

  • pickled veggies (radish, red onions, etc)

  • relish

  • ketchup

  • mustard

  • lime wedges

  • cheese sauce from above

The Method:

  1. First step is to make the cheese sauce, simply drain the cashews or sunflower seeds, and add all the ingredients for the cheese sauce into a high powered blender and blend on high for 1-2 minutes until everything is smooth. Set aside.

  2. Prep all your fixings for the platter. Set them aside.

  3. Heat an outdoor grill or a non stick pan on medium high, and cook your hot dogs for 5-8 minute while rotating occasionally. Or airfry for 5 minutes.

  4. As the hot dogs are cooking you can toast your buns. When the hot dogs are warm and the buns are toasted, remove them from the heat and add everything to a serving platter.

  5. Serve immediately while everything is warm. Let everyone Build Their Own Hotdog! (BYOH)

  6. Garnish each hot dog with a generous amount of your favorites and enjoy with friends and family at your next BBQ!
