Roasted Beet Hummus
Makes enough for about 4 people to snack - this hummus is a great addition to a wrap as well!

The Goods:
1 medium red beet (peeled and diced)
2 tbsp olive oil
1/2 tsp salt + extra if needed
1 tsp ground black pepper
2-3 garlic cloves, peeled and minced
1 lemon, juiced
1 can garbanzo beans, drained
1 tbsp tahini
The Method:
Place beets into a steamer basket. Steam for about 20-30 minutes or until the beets are fork tender.
Once the beets are cool, add them into a food processor or blender along with the olive oil, salt, pepper, garlic, lemon juice, garbanzo beans, and tahini. Blend on high for 1-2 minutes until all ingredients are smooth. Salt to taste.
Store in an airtight container for 4-6 days.
