Dragon Fruit Smoothie Bowl and Vanilla Coconut Granola

Summertime in San Diego = Smoothie bowls for breakfast. Especially when it’s just too hot to do anything else! This smoothie bowl is the sneakiest way to add in greens without it even affecting the color or flavor, so it’s a must for kiddos or picky eaters.

Makes 2 smoothie bowls and one 32 oz jar of granola

The Goods:

The Granola-

  • 1 cup gluten free oats

  • 1/3 cup flax seeds

  • 1/3 cup coconut shreds

  • 1/3 cup melted coconut oil

  • 1/3 cup dried mulberries or dried fruit of choice

  • 1/2 cup coconut sugar

  • 1/4 tsp salt

  • 1/2 tsp cinnamon 

  • 1/4 tsp nutmeg 

  • 1/4 tsp cardamom

The Smoothie Bowl-

  • 1 cucumber 

  • 3-5 romaine leaves 

  • 1 frozen banana

  • 2 cups frozen mango

  • 1 cup frozen dragonfruit or dragonfruit packet

  • 1 cup frozen papaya or watermelon

  • 1/2 cup coconut water + extra if needed

  • 1/4 cup hemp seeds

  • Top with passion fruit, blueberry, kiwi, raspberries, granola & watermelon!

The Method:

  1. Preheat oven to 350. In a bowl, mix together all the ingredients for the granola.

  2. Grab a sheet pan and line with a piece of parchment paper. Evenly distribute the granola mixture over the parchment. Cook for 15 min, mix well and then cook for 5 more for even browning. Let cool and set aside.

  3. In a high powdered blender, add the cucumber, romaine, and the coconut water. Blend this first and then add the rest of the ingredients and blend until smooth. If you don’t have a high powered blender, that’s ok! Just add some more coco water so you can get it movin’ in there.

  4. Scoop into bowls, top with granola, and garnish with more fresh fruit. Enjoy immediately!
