Chickpea Blondies With Avocado Chocolate Frosting

Holy cow these are so good. I’m actually eating one right now as I try to find the words to describe how truly amazing these treats are. They’re packed with protein, fiber, antioxidants, vitamins and flavor! Not only that, but they’re gluten free, totally plant based and refined sugar free too. I’ve also always gotten a lot of requests from parents who struggle to feed their kids healthy food. This recipe is a kid friendly recipe that’s so healthy but tastes like a treat!

All you need is a food processor and a baking dish for this recipe! Everything gets thrown into the processor and that’s it. No mixing, separating wet from dry or anything like that. Simple and easy high protein dessert.

Makes a 9x9 pan of blondies:

The Goods:

For the Blondies:

  • 1 apple, peeled and cored

  • 1/4 cup unsweetened plant milk

  • 1 can garbanzo beans, drained

  • 1/2 cup almond butter

  • 1/2 cup gluten free rolled oats

  • 1/2 cup coconut sugar

  • 5 dates, pitted

  • 1/4 tsp salt

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

For the chocolate mousse:

  • 1 large ripe avocado, pitted and scooped

  • 2 tbsp cocoa powder

  • 1/2 cup melted dark chocolate chips

  • 2 tbsp maple syrup

  • scoop of coconut oil for pan

The Method: 

  1. First up, preheat oven to 350.

  2. Next, prep the blondies. Add the apple and nut milk to the food processor, process until smooth.

  3. Throw the rest of the blondie ingredients into food processor and blend till thick and smooth.

  4. Coat 9x9 baking pan with coconut oil, add the blondie batter evenly across and bake at 350° for 40-50min.

  5. After 40-50 minutes, remove and let blondies cool.

  6. Clean the food processor.

  7. As the blondies are cooling, grab a small sauce pan and over low heat, melt the chocolate chips. 

  8. Once the chocolate is melted, combine the maple syrup, cocoa powder, and avocado into the cleaned food processor. Blend until you get a nice chocolate whipped mousse! Set aside.

  9. Top blondies with chocolate mousse and cut into squares. Enjoy with your favorite plant based milk.
