The Goods:

The Method:

  1. In a heavy bottomed sauce pan, add your coconut sugar, milk, and bring everything up to a medium high heat while stirring constantly. Once it’s hot and starting to bubble, lower heat to a low simmer and cook down.

  2. Cook down and reduce the liquid for about 15 mins, again while consistently stirring with a rubber spatula or rubber whisk. Don’t leave it be, or it has a higher chance of burning. The game here is low and slow.

  3. Around the 12-15 minute mark, you will see the liquid become thicker and thicker until you have a perfect consistency of thick caramel sauce! YUM! It should have darkened in color and should have no clumps.

  4. Remove from heat and let it cool for 1-2 minutes before using, but use within 45 minutes for otherwise it will harden as it cools. Perfect recipe for fruit, coffee, dessert, garnish, etc. Enjoy!

  5. Lasts in an airtight container in the fridge for 5-7 days. Reheat to use or use cold for extra thickness.
