Broccolini "Cheddar" Soup

This is comfort food at its finest! Sometimes in life you just want something cheesy, flavorful, filling that hits all the spots of home. The best part about this soup is that it’s totally plant-based, oil free and can be eaten even when you’re feeling under the weather as that’s not the case with a traditional cheddar soup due to the dairy!

Not only is this high vibe comfort food, but it’s quick to make in a weeknight bind and it’s packed with nutrients making this the ultimate win-win!

I like to top mine with sriracha and toasted local bread to complete the feel. Hope you love this as much as I do!

Makes 4 servings:

The Goods:

  • 1 onion, diced

  • 3 large carrots, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 3 small golden potatoes, diced

  • 1 tbsp miso paste

  • 3 1/2 cups veggie broth

  • 1/2 cup cashews

  • 1 can coconut milk

  • 1 lemon, juiced

  • 1 tsp turmeric powder

  • 1 tsp white wine vinegar

  • 1 tbsp nutritional yeast (optional)

  • salt + pepper

  • 1 head broccolini, stems removed and chopped

  • your favorite hot sauce + toasted bread to finish

The Method:

  1. In a soup pot over medium high heat, add a splash of broth, onions and a pinch of salt + pepper.

  2. Cook onions for a few minutes until soft and add carrots, celery and garlic.

  3. Cook for two more minutes, if it begins to stick just add a little more broth to the bottom.

  4. Add miso paste and potatoes - add another generous pinch of salt and pepper. Stir well.

  5. Add remaining veggie broth, cashews and coconut milk.

  6. Cover and cook on medium for 10 minutes.

  7. Add lemon juice, turmeric, vinegar, nutritional yeast and a pinch more salt. Check to make sure that the potatoes and carrots are fork tender.

  8. Add all ingredients to your blender and blend until smooth.

  9. Check for flavor! You might want to add more lemon juice, nutritional yeast (for cheesy flavor), salt or pepper depending on your taste!

  10. Add back into the soup pot and stir in broccolini. Cook for 2 minutes and serve with hot sauce and bread!
